Easy Baked Rice Custards with Fruit

PREPARATION TIME: 10 MINS
COOKING TIME: 30-40 MINS
SERVES: 6

INGREDIENTS
6 tbs cooked rice
3 eggs
6 teaspoons honey or rice syrup
1 ½ cups milk
3 large apples, peeled and diced into 2cm cubes
3 tbs sultanas or 6 dates

NOTE
Always look for organic ingredients to be sure you are avoiding
additives. Check the label carefully to ensure there are no nasties
in your ingredients.

PREPARATION
** Measure out all the ingredients
** Grease 6 x ½ cup Ramekins
** Turn on oven to 160°C

METHOD
1. Place the diced apples in a microwave proof bowl with 1 tbs
water.
2. Cover the bowl with a piece of paper towel and microwave
for 5 mins or until apple is soft (if you are using a saucepan
to stew apples, place lid on saucepan and cook on med-low
heat until soft).
3. Whisk the honey, milk and eggs in a large measuring jug until
combined.
4. Evenly spoon the cooked rice into the bottom of the 6 ramekins.
5. Evenly sprinkle the sultanas or dates and cooked apple over
the rice in the 6 ramekins.
6. Pour the egg and milk mixture into all the ramekins.
7. Place the ramekins into the baking dish and fill the baking
dish with hot water until the water is half way up the sides of
the ramekins.
8. Cook in the oven for 30-40 mins or until the custard is just set.
9. Eat warm or cold.

SERVING SUGGESTION
For an extra treat, serve with a dollop of cream or ice cream.

STORAGE, REHEATING & LEFTOVERS
** Leftover custards can be stored in their ramekins (covered) in
the fridge for 3-4 days.
** Reheat in microwave until centre is hot.
