Vegetable Pikelets

2 cups flour self raising
2 cups vegetables, raw, finely grated
2 eggs, lightly beaten
1 cup cheese, grated
1 ½ cups milk
salt and pepper
butter for cooking
cream cheese to serve
fresh herbs to serve

1. Whisk together all the ingredients (except the butter and cream cheese) in a large bowl.
2. To cook your pikelets, pour ¼ cup of mixture into a preheated pan greased with a little butter on medium heat.
3. Once the top forms bubbles, flip and cook until golden brown.
4. Serve with a smear of cream cheese and fresh herbs of your choice.

Store any leftovers in an airtight container in the fridge and use the next day.

** You can use any combination of raw vegetables for this recipe.
** Try fresh coriander, parsley or your favourite herbs to add to the flavour of your pike lets.
** For a touch of spice, add some sweet chilli sauce with the cream cheese when serving.
